What are the most popular frosting flavors?
Honestly, vanilla and chocolate still seem to be the top favorites. But we do many combination cakes with layers of praline buttercream or lemon buttercream with European preserves... They are all delicious because we make everything from scratch.

Which type of frosting holds up the best?
For wedding cakes (including those pictured here), we use rolled fondant almost exclusively. Fondant comes in either vanilla or chocolate and it gives a smooth, finished look, where buttercream has a more rustic feel. The fondant also helps preserve the cakes, which tend to sit out for an entire day.

Are there any special considerations for outdoor wedding cakes?
For outdoor weddings, we keep the cakes refrigerated for as long as possible beforehand. And we would never use chocolate or buttercream frostings for fear that the frosting would melt away.
